Product Description

Food grade compound enzyme β-glucanase and xylanase for beer brewing processes

SuBerzyme GL (fungal type) is an optimized recipe consisting of β-glucanase and xylanase. The product applies to the saccharification and other β-glucanase and xylanase degradation processes in beer brewing. It can eliminate the turbidity caused by polysaccharides, improve the filtration of wort and beer, decrease the viscosity of the wort, and increase the easiness of cleaning.

Characteristics 

Effective pH range: 3.0-7.5; Optimal pH range: 4.0-6.5

Effective temperature range: 20~80℃; Optimal temperature range: 50~70℃

Benefits 

- Effectively degrade β-glucanase and xylanase, improve the filtration of wort and beer, and decrease the turbidity of the wort;

- Degrade polysaccharides, and improve the saccharification rate;

- Increase the lifetime for draft beer filter membrane; 

- Prevent or eliminate the turbidity caused by polysaccharides.

Application

0.01%-0.03% by malt weight for beer brewing process;

The optimum dosage should be determined according to the actual condition parameters.

Add crushed malt. Within 5 to 10 minutes after starting adding the crushed malt, add the enzyme into the mash tun along with the crushed malt. Mix well. 

Storage

Preserve in a cool and dry area with good ventilation. Avoid direct sunlight. Keep the temperature at 0℃~10℃ to extend shelf-life.

Shelf-life

12 months at room temperature (25℃).

Safety

Avoid inhaling enzyme powder. Rinse immediately with water if contact with skin or eyes.
