This product exhibits exo-endonuclease activity, hydrolyzing the hydrophobic amino acids at the bitter peptide terminus to eliminate bitterness during protein hydrolysis while generating umami peptides, thereby enhancing the flavor and mouthfeel of the hydrolysate. When used with our endo-protease, it effectively increases the amino acid nitrogen content in the hydrolysate, boosting umami flavor.

Dosage
The recommended addition amount was 0.1%~0.5% of the protein substrate weight, and the optimum addition amount should be determined according to the specific conditions of the process.
Usage
The enzyme was dissolved in a small amount of water (5~10 times) and added to the protein hydrolysate, and stirred evenly.
Storage condition
The product should be stored in a cool, dry and ventilated place below 25℃, avoid direct sunlight and long-term contact with the outside. If the cold storage is available, it is recommended to store the product at 0℃~10℃, which can prolong the shelf life of the product.
